Micro Lot Coffee From Ilda Mayo in Ecuador

At Finca Los Eucaliptos, Ilda pays meticulous attention to harvesting, only selecting the ripest red cherries. She achieves this by floating her cherries in water to remove any under ripe fruit. A 20 hour dry fermentation succeeds depulping, and the coffee is washed four times before being moved to raised drying beds. The coffee is dried slowly, over the course of the 30 days to achieve an impressively stable finished product.
