At 1700 meters, the Caturra and Colombia cherries grown at Lusitania are able to ripen slowly, increasing the complexity of flavor and sweetness in the cup. Edith’s coffee is shade grown under Plantain and Nogal Trees. The coffee is processed with the traditional washed process, with a dry fermentation time of 24-30 hours. The coffee is fully and slowly sundried on parabolic drying patios. The result is a very stable and consistent product, which allows us to serve a coffee that roasts and tastes the same down to the last green bean.
