This premium lot comes to us from the ASOPROA producer cooperative in Cauca, Colombia. It was part of a quality program conducted by the Cosurca exporting cooperative in the same region. We like this coffee for its approachable profile. Brown Sugar, nougat and dark chocolate in the aroma give way to brown sugar, date and nougat in the cup.

Cosurca is an exporting cooperative located in southern Colombia that provides technical and commercial support to 1500 small farmer families with an emphasis on organic and fair trade coffee production. Cosurca exports fair trade coffee to small and medium wholesale coffee roasters, while also managing its own line of wholesale roasted coffee for its domestic market. The cooperative strives to be as inclusive as possible by engaging ethnic minorities and women in the different projects it implements in its communities.

This particular lot from ASOPROA was shade grown under citrus, avocado and plantain trees. It was hand harvested, depulped and fermented 12-16 hours. Cherries are then washed with clean water and dried in raised beds and parabolic dryers for approximately 8 days.
