A Delicious and Organic Honey Honduras Microlot That’s Restoring Soil Health at Origin

Each year, the coffee producer cooperative COMSA in Marcala, Honduras meticulously organizes a premium lot program to showcase their individual farmers. These lots are limited, experimental and unique. Arnaldo Nicolás Morales’ honey processed lot from his farm, Los Tucanes Verdes, is one of three premium Honduras lots Amavida has sourced this season. This coffee is full bodied, with the sugar sweet aroma of peach, dried fruit and berries, followed by hibiscus and black currant in the cup. We really enjoy this coffee’s balanced sweetness and approachable, soft acidity.

Arnaldo Nicolás Morales inherited his coffee farm from his father in 2013, and in 2014 he officially became a member of COMSA in Marcala, Honduras. It was there that he learned about organic agriculture, and the health/ ecological benefits that arise from environmentally friendly coffee production.  Arnaldo has worked diligently over the past 7 years increasing his coffee’s quality, particularly by improving the health of his soil through composting.

At 1378 meters above sea level, Finca Los Tucanes Verdes sits at a lower altitude than we generally see in our reserve series line up. This is one of the reasons for the unique cup profile in comparison to our other Honduras premium lots from COMSA this season. Depending on weather conditions, Arnaldo ferments his coffee between 15 and 50 hours, and dries it on raised nylon drying beds.
