Karla Portillo’s Honey Process Honduras Coffee

Each year, the coffee producer cooperative COMSA in Marcala, Honduras meticulously organizes a premium lot program to showcase their individual farmers. These lots are limited, experimental and unique. Karla Portillo’s Honey processed lot from her farm, Finca Palenta Verde is one of the tastiest lots we have had from COMSA’s program. With tasting notes of strawberry jam, peach preserves and blackberry, this fair trade and organic certified reserve coffee from Honduras is a standout in our lineup.

Karla Patricia is a third-generation coffee farmer, and the accumulated experience of generations is manifested in the quality of the coffee. The family considers coffee growing to be very rewarding. It was not until the 2016-2017 harvest that Karla, with guidance from COMSA, began to work with specialty coffees, specializing in the production of honey and natural coffees. The processing of these types of coffees are almost an artform as they are prepared in a very artisanal manner. But with enough passion, it becomes a delicate labor of balancing the elements so that the profile of every batch is almost impossible to replicate. Even if they apply the same process to the same coffee from the same trees, they are always surprised by a different product, but never an inferior quality.

The Bottom Line

Karla’s current offering from Finca (estate or farm) Palenta Verde deep in the Honduras coffee lands is a balanced, full bodied micro-lot which tastes of strawberry jam, peach preserves, and blackberry. This Reserve Series coffee  hints at the flavors of fall just ahead of us. We hope you’ll enjoy and share it!
