Ilda Mayo, Ecuador Coffee Farmer, Produces An Exceptional Crop!

This delicious, organic micro-lot was grown on  a small farm named Los Eucaliptos near the Palanda Conton in Southern Ecuador. Ilda María Mayo owns and operates Los Eucaliptos, and is a member of the APECAP farmer’s cooperative (a base level organization of the FAPECAFE network). Ilda is a member of the Mayo- Hidalgo family, who have been growing coffee in Palanda, Ecuador  for many years. Along with her two brothers, she was one of the founding members of the APECAP cooperative. Ilda’s attention to detail and passion for quality has won her countless awards, with her coffee consistently placing in the top 10 of the Bracamoros cupping competition in southern Ecuador.

At Finca Los Eucaliptos, Ilda pays meticulous attention to harvesting, only selecting the ripest red cherries. She achieves this by floating her cherries in water to remove any under ripe fruit. A 20 hour dry fermentation succeeds depulping, and the coffee is washed four times before being moved to raised drying beds. The coffee is dried slowly, over the course of the 30 days to achieve an impressively  stable finished product.

The Bottom Line

This is Amavida’s third year offering coffee from Los Eucaliptos, and it is always a treat to sample roast. The coffee’s stability really allows us take it where ever we want, bringing out the characteristics make it truly shine. This year, we are really impressed with this coffees balanced, sweet flavor profile and wanted to extenuate that.
