Best Dark Roast Coffee: Eclipse Blend

There’s no way around it; sometimes we just want a darker roasted coffee. We want a coffee that is sweet, dense and reminds us of simpler times. We hear you. Our Eclipse Organic Blend is here to bring some balance back to the table, and extenuate the complex, spicy flavors that are so often left out of a specialty coffee roaster’s core lineup. Eclipse is comprised of three components from some of our favorite growing regions: Guatemala, Sumatra and Colombia. We rotate the particular lots based on freshness and seasonality. We stretch this roast out to boost the blend’s body, and roast to a higher temperature to increase caramelization and sweetness. The result is an organic coffee blend that is intensely bittersweet and complex, yet smooth and balanced. Amavida tends to roast coffee to bring out the inherent flavors of the coffee, inevitably leaning us towards light and medium roasts. With Eclipse, we are intentionally trying to bring out those flavors that can only be achieved in roasting a little darker and longer than we normally do. In the lab we’ve found that the Eclipse Blend doubles well as a traditional style espresso.

The Bottom Line
