Burundi Coffee Cooperative workers drying and sorting parchment before the milling process. This method is common in many parts of Africa and considered on of the best methods. Air can circulate around the coffee and the dark screen can be used to cover the parchment to control the drying process. It takes a lot of care to produce great coffee.
